They could leave a couple at Dalston junction. That looks reasonable
secure.
They couldn't run much of a service with only two trains, plus the
trains may get cleaned/inspected/maintained in the depot overnight.
There's also the issue of getting drivers there and back. It seems
like a lot of complications for little benefit.
It's pretty standard to stable some trains in underground platforms, so why
not on the ELL? Highbury and Islington would be good for another 2.
