No they can't, they can know where most stared, and most end, but not

I find that sentence very difficult to parse.

Are you trying to say it's essential from them to not only track my
journey across London (and be able to reconcile it with every other
journey I make across London - both possible with an anonymous system),
but also that they need to know the address from which I started the
journey on foot in the morning, and finished at night (but not the
addresses I visited during the day).

If they absolutely need that additional information I'd be happy to give
them the first half of my postcode, which is plenty. It's 100 miles from
London, but obviously if you think it's vital for them...
