Really? What are the current fares? Some years ago it was more like
9/10, not 2/3.

For a single it is £8 Southern, £10 Thameslink, £12 Gatwick Express.

Any
cross-country way to get from Gatwick to Chatham avoiding going into town?

You may be able to find a way of doing it changing at just
Redhill/Tonbridge and Strood, but I don't think there'll be too many
trains a day doing this.

There's a reasonable service on each leg of the journey, it's just a
matter of timing the connections right (and between Tonbridge and
Strood there may be a further change at Paddock Wood). Also, the
Paddock Wood-Strood service is pretty slow and stops everywhere on
route, so the best balance between time and cost is still Gatwick
Express (if ticket permits) to Victoria and then a fast SET
Ramsgate/Dover service to Chatham.
